Salmon puff pastry trays
This is one of the first recipes my daughter helped me make in the kitchen. We had just got our toddler stool, and she helped cut the pastry using little cookie cutters. You can get little ones to help ‘paint’ the yoghurt mix onto the pastry!
This recipe uses salmon fillets which are rich in omega-3, iron, protein and iodine - all super important for growing kiddos! The recipe is suitable for toddlers, and could be a good finger food for baby-led weaning too
YOU NEED
~2 salmon fillets (you can also use pre-cooked as it’s easier to flake, but I’ve used raw- the cooking time is the same for cooking and re-heating pre-cooked!)
~4 tablespoons coconut yoghurt (or full fat Greek yog)
~1/2 tsp dried oregano
~Freshly ground black pepper
~Ready to roll puff pastry block 500g
TO SERVE
~Serve with a fresh salad / steamed + buttered greens
~Some roasted sweet potato wedges
TO MAKE
~Preheat your oven to 190 degrees.
~Mix the yoghurt with the dried oregano and season with ground black pepper
~Roll out the pastry and slice into 6 rectangles (option to use a cookie cutter to make some smaller ones for little hands!)
~Spread the yoghurt mix out on top of the pastry
~Use scissors to cut the salmon into small chunks
~Spread the salmon evenly between the pastries placing on top of the yoghurt mix
~Pop in the oven for 15 mins or until the everything is cooked well
