Baked porridge fingers ~ apple + raspberry ~

These are the perfect baby-led weaning breakfast and are great as a grab and go option for a snack loving toddler (like mine!)

You can mix up the added fruit, I have used raspberries here. You could also do a handful of blueberries, or some ripe peach diced. 

YOU NEED

  • 80g yoghurt (any)

  • 80mls milk (any)

  • 50g porridge oats

  • 1 small apple, grated

  • 1 heaped tablespoon of chia seed 

  • Pinch cinnamon

  • 1 tsp baking powder

  • Handful of raspberries (or other fruit chopped)

TO MAKE

  1. Mix everything together in a large bowl. Pour into little ramekins - or if you don’t have these, use a small flat bottomed oven dish instead. Bake for 30 mins at 180 degrees. Allow to cool then pop in the fridge to set nicely and firm up a bit. Slice + serve when ready (you can keep them in the fridge for a couple of days)

  2. You can also cook these in the microwave, for 1-3 mins (depending on your microwave power), again popping in the fridge to firm up then slicing and serving!
