Baby and toddler sizzling steak burrito bowl

This is one of our cook on repeat family dinners. It can be shared with the whole family!

YOU NEED

(Serves 2 adults and one baby/ toddler, double or triple as needed)

  • 200-250g steak of choice

Spice blend (makes a little more than you need- but you can keep and use again):

  • 1 tbsp smoked paprika

  • 1 tsp garlic powder

  • 1/2 tsp dried oregano

  • 1/2 tsp ground coriander

For the salsa:

  • 100g plum cherry tomatoes

  • 1/2 red onion

  • Juice of 1/2 lime

  • Black pepper

For the feta dip:

  • 150g yoghurt- I’ve used Full fat Greek yoghurt (or you can use coconut yoghurt - for dairy free- this is what my daughter has!)

  • 50g chunk of feta

  • 2 tbsp jalapeños (you can leave this out if you prefer- I actually add a few more as I loveeeee Jalapeños)

  • 2 tbsp of the brine / liquid from the jalapeno jar

  • 1/2 tsp garlic granules

  • Ground black pepper to your liking

Rice:

  • 250g sachet precooked rice (I use tilda Basmati)

  • Handful of fresh chopped coriander

Avocado mash:

  • 1 avocado, mashed with mild chilli flakes, and black pepper

To serve:

  • 2 tbsp cooked black beans- I like Bold Bean Co - but you can use any!

TO MAKE

  1. To make the salsa, whack all the salsa ingredients into the mini chopper and pulse until the tomatoes are well diced. Season with black pepper - and salt if you prefer

  2. For the feta dip: whack the yoghurt, feta, jalapeños, brine and garlic granules in the mini chopper and whizz until smooth. Season to your liking. For babies under 12 months - mix a little yog and feta together separately in a bowl.

  3. Pat the steak dry and season with your spice blend, and salt and pepper. In a hot pan with a bit of oil, sear the steak for 2-3 minutes on each side or until desired doneness. Let the steak rest.

  4. Warm the precooked rice and mix with the chopped coriander

  5. Slice the steak thinly against its grain.

  6. Assemble your bowls: Layer the rice, the sliced steak, and the salsa. Then top with the avocado mash and black beans and dollop over the feta dip.

For babies 6 months+ offer a large finger of steak to knaw on (or skip this bit completely if you don’t feel comfortable) plus the avocado mash, salsa, rice and some yoghurt + feta dip (see step 2 above) and some mashed black beans stirred into the rice

For babies 9/10 months+ offer small shreds of steak (or skip completely if you like) and squished or mashed black beans, plus the avocado mash, salsa, rice and some yoghurt + feta dip (see step 2 above)

For babies 12 months+ and when developmentally ready - black beans can be offered whole (see toddler plate below). Steak will continue to need to be modified as meat poses a choking hazard to small children. Offer small shreds and avoid large tough chunks.
