Babies baked porridge fingers
These are the perfect baby-led weaning breakfast and are great as a grab and go option for a snack loving toddler (like mine!)
My little one lived off these in the early days of weaning and I still use them regularly as a snack now she is a toddler
Adding ground nuts and seeds, and chia seeds, adds some protein, iron and zinc. The apple provides some fresh fruit, and you can mix this up and add more fruit!
YOU NEED
400mls milk (whole cows milk or soya/oat/almond or any suitable alternative)
150g porridge oats
1 small apple, grated
3 heaped tablespoons of chia seed
2 heaped tablespoons of ground mixed nuts and seeds
Pinch cinnamon
2 tsps baking powder
TO MAKE
Mix everything together in a large bowl. Pour the mix into a silicone brownie tin - or if you don’t have this use a small flat bottomed oven dish instead. Bake for 30 mins at 180 degrees. Allow the oats to cool fully then pop in the fridge to set nicely for an hour or so, then slice + serve. By allowing to cool before slicing the oats can fully “set”. They will likely crumble if you slice them before cooling.
You can also cook these in the microwave, for 1-3 mins (depending on your microwave power).
