Babies milk ladder Mac n Cheese - step 3 of the milk ladder

This babies mac n cheese recipe is suitable for step 3 of the iMAP milk ladder  for non-IgE milk allergy

YOU NEED

  • 20g macaroni pasta

  • One small tomato, diced finely 

  • 1 teaspoon plant-based butter 

  • 1 teaspoon of plain flour

  • 80ml plant milk alternative (any - your choice)

  • 15g hard cheese like parmesan or cheddar, grated

TO MAKE

  1. Preheat your oven to 180 degrees

  2. Cook the pasta as per packet instructions for example boiling in water on the hob for around 10-12 mins

  3. Prepare your roux (white sauce): melt the butter in a pan on a low heat, then add the flour and stir, then add the milk a bit at a time and keep stirring, until the milk is thick. 

  4. Add the pasta and the chopped tomatoes  to the sauce, then stir to combine. Pour the pasta into an oven dish, top with the cheese and cook for 10-15 mins in the oven or until the cheese is cooked

Milk ladder instructions:

Day 1: Taste on day 1 (one pasta piece)

Day 2:  1/2 portion on day 2

Day 3: full portion on day 3

Note: This product does not contain any milk in a wheat matrix and it may therefore affect the allergenicity of the dish. However, the next step up is cheese uncooked, so it appears an acceptable step up to me. Cooking cheese at a high temperature (180 degrees) will reduce the allergenicity of the milk proteins within. But always check with your healthcare provider what options are suitable for your baby or child first
