Salmon tacos with a zesty lime and corn salsa DAIRY FREE OPTIONS
A fresh + healthy take on fish tacos, baby and toddler friendly edit
Can babies eat salmon? Absolutely! It’s an energy dense and nutritious food packed with omega-3 fats which are super important for brain development in babies
YOU NEED
(Serves 3 adults and 1-3 babies/toddlers)
Salmon
4 salmon fillets
Half lime, juiced
Extra virgin olive oil
Ground black pepper
Salsa
250g punnet of plum cherry tomatoes
One red onion, peeled, roughly chopped
One lime, juiced
Small 200g can sweetcorn, drained
A large handful of fresh coriander (and a small amount of finely chopped coriander to serve)
Optional: a very small bit of mild red chilli
Lime “sour cream”
Oatly creme fraiche (or dairy sour cream or creme fraiche)
Half lime, juiced
Coriander avó smash
2 ripe avocadoes
Small handful finely chopped coriander
A small amount of finely chopped coriander to serve
To serve
Small round corn tortillas x 3-4 per adult, 1/2 per baby, 1-2 per toddler
Vegan grated cheese / grated cheese to serve
TO MAKE
Preheat air fryer to 190 degrees (or oven)
Squeeze the lime over the salmon fillets, drizzle with olive oil, and season with ground black pepper and then add to the air-frier for 10-15 mins (15-20 mins) or until cooked through, opaque and flakes easily with your finger. Flake the salmon into largish pieces ready to pop on top of a taco
Make the salsa, add all ingredients except the corn and whizz in a mini chopper until a little chunky but no large pieces of onion or tomato are remaining. Stir through the sweetcorn and top with a few pieces of finely chopped coriander
For babies under 9-10 months: omit the sweetcorn and instead for the adults only serve the corn on top or stirred through at the end
Make the lime “sour cream”. Stir the squeezed lime juice through the oatly creme fraiche
Mash the avocado with the back of a fork. Stir through the finely chopped coriander
Option to warm the tortillas in the oven for 2-3 mins on a low heat before serving
TO SERVE
Layer the lime sour cream, followed by salsa, a dollop of avo smash, some salmon flakes and top with some cheese (optional!)
For babies under 9 months:
Mash some salmon into the salsa, serve with a dollop of avo smash, and spoon feed or let hands get messy
Serve a corn tortilla cut into fingers as a finger food on the side with a few larger pieces of salmon for baby to self feed
Babies 9-10+ (or when developmentally ready):
Serve the corn stirred through the salsa, on the side with the corn tortilla fingers and smaller salmon flakes
