This loaf is perfect for a little on-the-go snack, or for when you fancy a little something sweet and you want to share it with your little babs or a toddler. The added orange zest gives a delicious zesty flavour, but you can also make it without so don’t worry if you don’t have any in!

Spread a little butter or non-dairy spread on a slice fresh out the oven

YOU NEED

  • 3 eggs

  • 80ml extra virgin olive oil

  • A generous drizzle of honey (2-3 tablespoons)*, maple syrup or date paste (or completely omit this for under 1 years!) (*honey not suitable for under 1s)

  • 35mls almond milk (or dairy-containing milk)

  • 1 whole orange, zested

  • 250g wholemeal flour

  • 3 tablespoons of ground nuts and seeds mix (I have used yum and yay, or you can make your own by blending nuts and seeds of your choice in a high powered blender)

  • 1.5 teaspoons of baking powder

TO MAKE

  • Preheat the oven to 180 degrees

  • Add the wet ingredients together in a bowl and whisk to combine, then add the dry, stir to combine. Spoon straight into a lined loaf tin (don’t delay as the baking powder gets to work right away!)

  • Bake for 30 mins in the oven

  • Leave to cool for a few mins, then slice into 12-14 slices

  • Try with a little butter or non-dairy spread on each slice

Storage: store for up to a week in the fridge, or slice and freeze.

*not for under 12 months
