GREEN GODDESS MUFFINS

These green muffins are suuuper delicious. They are baby and toddler friendly, but can be enjoyed by the whole family- our toddler LOVED them but my boyfriend ate most of ours…
What are the nutritional benefits:
✨These delicious little muffins are packed with green goodness from the spinach and peas
✨With a touch of natural sweetness from the bananas
✨Peas provide protein and fibre, and the eggs provide iron and choline - all are essential nutrients for babies
YOU NEED
WET INGREDIENTS
2 eggs
Large handful baby leaf spinach
100g frozen peas (or fresh if you have them!)
2 ripe bananas
100mls extra virgin olive oil
2 tablespoons of ground flax (you can make without if you don’t have this!)
DRY INGREDIENTS
160g self raising flour
1 teaspoon of baking powder
TO MAKE
Grease your small/mini muffin holes. Preheat your oven to 180 degrees (160 fan)
Whack the wet ingredients in a blender. Whizz until smooth.
Add the dry ingredients to a large bowl and stir to combine.
Add the wet to the dry and fold in with a big spoon, try not to overmix! You’ll lose the rise and fluffiness
Pour the batter into your greased muffin holes.
Bake for 13-14 mins or until the muffins are set or a skewer comes out clean
These muffins are suitable from 6-7 months, but can be enjoyed by toddlers too (and adults!)
