🍌🌱Banana + courgette loaf - baby and toddler friendly recipe

A high protein and veggie packed loaf suitable for babies and toddlers

🌱Made with eggs, nut butter and ground almonds

YOU NEED

  • 2/3 large courgette or one small courgette, grated

  • 3 eggs

  • 2 overripe bananas, mashed with a fork

  • 3 tablespoons of smooth runny peanut butter (no added salt or sugar)

  • 3 tablespoons of almond milk (45mls)

  • 75g ground almonds

  • 200g plain or wholemeal flour

  • 1.5 teaspoons of baking powder

TO MAKE

Preheat your oven to 180 degrees

Place the grated courgette inside a clean tea towel and squeeze the courgette over the sink to get the juice out

Crack the eggs into a bowl and add the mashed banana, drained courgette, smooth peanut butter and the dash of milk

Stir through the ground almonds, flour and baking powder

Pour into a loaf tin and bake for 35 minutes or until a skewer comes out clean!

Slice and serve…!
